Linzer Cookies Recipe

Oh the famous Linzer Cookies! This is another all time favorite Christmas cookie to make. These cookies may take some time and patience to make, but it is so worth it when you're eating it! I love eating these cookies around the holidays. And the other thing I love about them is you can put any jam or any filling of your choice in the middle of the cookie. To make these cookies here is what you will need.

Ingredients

1/2 cup of almonds

1 cup of sugar

2 ¾ cups of flour

1 Tbs. Lemon zest

½ Tsp. Baking powder

¼ Tsp. Salt

2 Stick of butter (softened)

1 package of cream cheese (Softened)

1 Egg

Powder sugar

Strawberry jam


Place almonds and ½ cup of sugar in a food processor.

Grind until it is a course flour texture.

In your mixing bowl add flour, lemon zest, baking powder, salt, and remaining ½ cup of sugar.

Put mixer on low until dry ingredients are well combined.

Then add butter, cream cheese, and egg. Turn mixer on low, then slowly increase speed. But do not have it mix too fast. Let it mix thoroughly for 3 to 5 minutes.

Place 2 plastic wraps on your counter, and divide dough in half. Wrap dough in the plastic wrap and chill for 1 to 2 hours.

Use a Linzer cookie cutter set. If you do not have that set, you can use 2 cookie cutters. One with a hole in the middle, and one without.

Roll dough out on flour surface to 1/8th inch thick.

Use first half of dough for the bottom whole cookies (without hole in center), and use the other half of the dough for the top (with hole in center). Cut cookies out, and bake at 350 for 12 to 15 minutes.

Let the cookies completely cool!

Spread ½ Tsp. of strawberry jam on the center of whole cookies (without the hole in center).

You can use whatever jams you like. We used strawberry jam, grape jelly, Nutella, and peanut butter.

Place cut out cookie (cookie with the center hole) on spread and sprinkle with powder sugar.

Cookies are best served with a glass of cold milk!
